SERVES I Preparation time: 10 minutes
- I ripe avocado, peeled and sliced
- garlic clove, peeled
- juice of 1/2 lemon
- 300ml (1/2 CA pint) rice milk salt and freshly ground pepper sprigs of fresh coriander, to garnish
- Place the avocado in a blender with the garlic, lemon juice and rice milk. Blend until smooth. Season with salt and pepper and serve garnished with fresh coriander.
